Analysis of Thaumatin (SP-825)

Thaumatin is a highly basic protein having isoelectric point of 12. Its molecular weight is approximately 22,000. It is known to provide a sweetness about 3,000 times more than white sugar and is used as a low-calorie sweetener. In this application, thaumatin standard was analyzed using IEC SP-825, a strong cation exchange column. The method referred to the China GB's "Analysis Method for Food Additive Thaumatin."
The sample dissolved in water observed a partial overlapping of the thaumatin peak and a solvent-derived peak. Thus, it is recommended to dissolve the sample in the eluent.
