Organic Acids in Vinegar (KC-811)

Organic acids in vinegar were analyzed using RSpak KC-811, a column for organic acids analysis. Chromatograms (1) and (2) are the analysis results of grain vinegar and pure rice vinegar samples, respectively. The compositions of organic acids in different vinegars vary largely depend on their ingredents, and this composition difference is thought to affect the flavor.
